Gstreamer video pipeline using xdg-open and without saving.gst files

I am interested in designing a pipeline using gstreamer that starts with a raw video feed, makes a few simple manipulations, and then renders the final video feed to disk.
My first question is, what is the best way to do this? Should I use gstreamer’s pipeline mechanism to combine all the video manipulation pipelines into a single pipeline? Should I save the final video feed separately as a gstreamer.gst file and then use a second pipeline to render it with gstreamer? Or does gstreamer provide a mechanism to render a video feed back to video?
My second question is how should I pass in the video and audio channels to my pipeline? For the pipeline I have so far, I render my videos in a GStreamer example file that uses an mp3 source for the video and the dummy sink for the audio.
